MEXICAN FIESTA NIGHT - MALAYSIAN STYLE
Amanda, Heather, and I decided to throw a Mexican fiesta dinner party on Thursday, February 17th. We were all craving a break from noodles and prawns...and some sloppy TexMex sounded sooo good! Johnnie and I were scheduled to fly back to the states the very next day, so we figured the fiesta would be a fun send off on our last night.
Heather, Amanda, and I started shopping for all of the groceries and supplies early in the week (knowing that we would most likely have to go to multiple stores to find everything we needed). By the time Thursday rolled around, we were ready! Food prep started in the A.M. when Amanda got over to our condo. Mmmm...guacamole!!
When that was complete, we headed down to the pool to soak up some rays (and maybe get the party started with a margarita or two!).
Eddie brought home some durian...a local fruit that smells pretty much like rotting meat. My mouth is smiling in this picture, but my nose definitely wasn't. :)
When the guys got home from work that evening, the food was ready to go, but the fun had already been started hours ago!

We served creamy chicken enchiladas, zesty steak enchiladas, beef tacos, Mexican rice, beans, nachos, and of course all the "fixin's!"

What a way to end our first Malaysian adventure! Johnnie and I had such a fantastic time in Kuching...even better than we could have imagined. I don't even have to say how much I didn't want to leave. Good news, though...
We are for sure, 100% going back to Southeast Asia with MEMC in April!! Johnnie has work to do in Singapore for a few months, and there was no chance he was going without this little lady! While we will be in Singapore most of the time, Johnnie and I are most definitely going to be traveling on the weekends...thinking about Bali, Kuala Lumpur, maybe Vietnam, Cambodia! The one place we are SURE we will be going is BACK TO KUCHING!!!!
